Jack Rabbits

Does anyone have a good recipe for jack rabbit? I know all about cooking a cotton tail but never have tried a jack. Shot a few on a turkey hunt last week and want to try them. I always hear people talking about how tough they are but so is the same for most wild game if you don't know how to cook it. I think anything can be made tender if you cook it right or long enough. If anyone has a few good recipes please share....

Their taste is best described as a combination of liver and cottontail. That is if they are fried. I have heard of people making chili with them and that it wasn't bad that way. They are really to lean to put on the grill, unless you add bacon or something else to keep them moist. Just my 2 cents worth.

delicious jackrabbit chili....
make you a pair of huaraches(flip-flops) out of a tire and some string or leather straps...
walk from Eagle Pass to Sabinal, avoiding all roads, only following hi-lines.
a mile frome Sabinal, build a small mesquite fire, melt some manteca (lard)
in an old coffee can on the fire. brown the jackrabbit and throw in half a bottle of Bolners Fiesta Brand Chili Mix and some water out of the cow trough. boil till tender, 2-3 hrs should do it. serve w/ canned refried beans and whatever tortillas you have left.
side note... try to keep the green stuff from the trough to the side, some folks like a salad before their meal.

Boil with salt garlic, onion and bay leafs. Once cooked and the meat is soft, take it out of the water and dice the meat and fry it until a lil brown. Same time the meat is frying, boil about 6 green husk tomatoes until they are soft. Put the tomatos in the blender with a cup of water, diced onion, garlic, black pepper and a pinch of cummin and if you like it spicy, some fresh chopped jalapeņo or serrano pepepr. Pour the sauce you made in the belnder in the pan with the jackrabbit meat and let bring it to a boil for about 3-5 minutes. If needed, add more water so it will not dry .

The best way I've found is to season to your taste, place on a cedar plank in the oven at 350 for 1 hour 15 minutes. Remove from oven, if it appears tender, throw it out and eat the cedar plank....Just sayin

Had 2 in the freezer. Boiled them for a couple of hours. Fed them to my dog over a couple of days. He loved the hell out of me for those few, short days.
