Fresh kingfish properly prepared is excellent. The key is bleeding the fish and icing it down properly (just like tuna). Mustard fried (roll in yellow mustard then cornmeal), tabasco fried (roll in tabasco then corn meal), brined and hard smoked is very good, especially if you flake the smoked king into cream cheese with some chives and make fish dip out of it, king fish au gratin (look up a crab au gratin recipe, and sub kingfish boiled in crab boil seasoning for the lump crab meat, even better than the original because of no little pieces of crab shell), kingfish salad (prepared the same as tuna salad, use smoked king or the above mentioned boiled in crab boil king). DISCLAIMER:
kings less than 36" are the best for eating, and even one this small has a LOT of meat. I normally don't keep more than one king every two or three trips, just because of the amount of filets they provide, and you DO NOT want to try freezing it. Food quality on kings goes down tremendously as soon as its been frozen.

Caught this one on a white soft plastic yesterday with no leader on 12lb test. Talk about light tackle! We were about 35 out, on a weedline messing with some chickens and I let it drop a little deep for a minute and lo and behold, this king snatched it up. I'd definately recommend a leader if you're targeting the toothy boogers!

i like to cook it on the grillbut first marinate it over night in italian dressing with a little worchershire sauce. you can also use piggy perch for bait if they are the size of your palm,they work well also. if you really want to catch alot of kings go to tony's rock on the east 27's

I like to cut in to steaks, then cut the steaks in 4 pcs removing bones and red meat, batter with cajin fish meal, and deep fry in peanut oil. I call them fish nuggets!

You can catch em inside the ship channel when the conditions allow. I have trolled the ship channel many times trying to catch a tarpon and always ended up with kings, and sometimes some pretty big ones. Only issue with it is the boat traffic and keeping clear of anchored boats.
A small ribbonfish rigged behind a medium size snapper slapper works dang good if you want to troll. You just need to make sure it pulls straight, and pull it slow. A pogie on the same rig will work as well.
