Trolling Motor Question

I just got a flatstalker and am trying to decide what kind of trolling motor to put on it. If you are not familiar with the flatstalker, it is a 12ft plastic "mini" flats skiff that weights about 100lbs. I am trying to first decide if a 2.5 hp gas engine or a trolling motor would be better. I am leaning toward the trolling motor because the gas powered ones are harder to raise/lower and the area where I fish gets shallow. I am a little confussed when it comes to selecting a trolling motor though. Does a higher lb thrust actually move the boat faster, or does is it just move a heavier boat at the same speed?

I already have a 30 and a 40 lb Minn Kota Endura, and it seems like they move the flatstalker at about the same speed. I was wondering if a 55 lb would move the boat any faster, or is it just a waste of money. I also heard that they have custom props (www.kipawapropellers.com) that are supposed to add speed. I was just wondering if anyone had any advice that may help me. Thanks.
