I baked a flounder last night and had some left over. Decided to try making some patties. Came out good.
Broke the remaining flounder up making sure there were no bones.
2 eggs wisked then added the fish with enough panko(bread crumbs)
to make it stick together.
Sautee in olive oil and butter till brown.
