I don't boil 'em your way, but even I know there are a "million ways to skin a cat". I was just never a fan of seasoning all over the outside of the crawfish. Tends to to be just a little bit messier. But I wouldn't turn 'em down if invited to one of your boils.

I'm green when it comes to boiling crawfish. This was a first go round and they came out good tasting, just a bit to spicy, but plenty edible. The bugs i bought at Boyd's were packaged in a plastic bag instead of burlap/mesh, and it seemed strange to me, i expected them to be in a mesh bag. I also did the 10 lbs i had on a big pot on the stove, and i was afraid my stove was never gonna boil the water. It finally did boil, but i was wishing i had an outdoor, gas fired burner to boil the water on. Any place local to buy bugs from that is better than Boyd's, or no? I like Boyd's overall, just not so crazy about the bugs being in a plastic bag. It seemed to kill them quick. Oh, and the reasoning behind just 10 lbs was partly because it was an experiment, and also because I wasn't sure if my wife and kids were gonna eat them or not. My wife and I at em all.  My 2 year old son was running back and forth between me and his momma, seeing who would peel one out the quickest to feed to him. He was hilarious. Eating spicy crawfish like they were going out of style.

Sounds like great success.....Now run to Academy, Home Depot, or some other spot and get yourself an 80qt pot (with insert) and a high powered burner....The pot will fit 1 full sack of crawfish and all the goodies (mushrooms, sausage, onions, potatoes,etc) with no problems and no risk of boil over. And a 'big' burner sounds like a jet taking off and will get that pot rolling pretty quick.
Good luck!....and you know where to find us if you find yourself burdened with too much beer and/or crawfish.
