I have never had ANY offshore fish until tonight when I cooked this! It was OUT OF THIS WORLD FANTASTIC!! I have GOT to get my butt offshore to catch some other offshore fish!

4 Mahi-Mahi (dolphin/dorado) steaks about 3/4" thick
2 Tbsp. Olive oil
1 Tbsp. fresh parsley
1 clove garlic, minced
2 Tbsp. lime juice
1/4 tsp. hot pepper sauce
2 tomatoes, chopped (I used 1 large tomato)

Combine 1 Tbsp. of the oil, parsley, garlic, lime juice, hot sauce, and the tomatoes. Marinate overnight.
Brush filets with remaining 1 Tbsp of oil.
Preheat grill. Grill on fish screen ( I used heavy duty aluminum foil) on medium 5" from heat for 12 minutes or until fish flakes easily, turning once.
Serve with tomato salsa. Serves 4

I'm telling you folks, I don't know what I expected, but this dish was FANTASTIC!! I didn't do too bad for never having cooked fish on a grill before, and not knowing what I was doing.... Hubby asked for seconds!! LOL
