On the boats in the Caribbean they roll them in a simple half salt half pepper mix and fry them. I've never tasted anything better!

There are few if any bad receipes for wahoo. Anything that works with a firm white meat fish should work well - grilled, baked, fried, ect. They don't need much seasoning or other stuff piled on top.
