Hey guys ,
Thought we would start a thread and share some of our favorite fish recipes (small cats only =)) ... I will start it off with a dish I fixed my family tonight ... We will call it Catfish's catfish stir fry ...
I first fillet my cats and cut off all excess red streak - I usually accomplish getting most of that out by cutting my fillets in half and making a diagonal cut to cut out most of the red meat -- For those of you who do not do this , try it - I gaurantee a better tasting fish -- or your money back -- GRIN ,,,
I use several pots and pans while making my dish ... I start off with my largest pan - I put butter in the bottom to melt and butter in the bottom of a pan to cook the fish up ... I add vegetables - especially mushrooms - we like shrooms - to the large pan --You can cheat and buy stir fry premix at Wal-Mart -- It usually contains water chestnuts , carrots , some type of beans ect.... What you add is up to you ... I put this dish on low and add garlic salt and soy sauce to start locking in that flavor ..
Next I start cooking the fish --- This is done on Med , no breading -- I sprinkle Garlic salt and a splash of soy for flavoring ... When the fillets get close to done I chop them up into small pieces and after I ensure they are done ,,, add them to the big pan -- This is done over and over until I have my desired amount of fish .. ** NOTE: I keep a few pieces of fish non-chopped and serve them with the dish -- The fillets are great like this ... If you leave too much red meat on they become slimy though -- SO no red meat and it is awesome ..
In a pot I boil water to make some rice , most of us can follow the directions on a box just fine and the white rice is easy to make ...
After the rice gets going .. I crack a few eggs into a bowl add a little milk , stir and start to cook the in a pan -- just scrambled eggs here - nothing fancy -- I like to add some garlic salt - We are garlic salt freaks -- Once the eggs are done - Add them to the main pan ...
As soon as the rice is done and I have enough fish cooked -- I add everything to the main pan , I add enough soy sauce to turn all the rice a different color . I put the eye on high , stirring all the time , until I am satisfied all the excess moisture is gone ... You do want it moist -- Just not wet ... and it is ready to serve ,,,
Just a note here ... Be careful with your Garlic Salt -- It is easy to smother it , so not too much , however do not be shy -- A lot of it cooks ...
