I'm looking for a good cajun spicy shrimp gumbo recipe, If you know of one and don't mind sharing it I'd greatly appreciate it.

Cajun Shrimp Gumbo



2 lbs peeled shrimp (31-35 ct) 1/4 c. chopped parsley

1 lb flaked crab meat 1-13 oz. can chicken broth

*1/3 c. flour 3 bay leaves

*1/3 c. liquid vegetable oil 2 Tbs. Worcestershire sauce

2 c. chopped onions (package) 1 Tbs. thyme

2 c. chopped celery 1 Tbs. Kitchen Bouquet

1 c. bell pepper 2 tsp. each garlic salt and pepper

1 pkg. frozen chopped okra Tabasco sauce to taste

1-8 oz. can tomato sauce Dash red pepper to taste

2 chicken bouillion cubes Hot cooked rice



To make roux, heat oil in large cast iron skillet. When very hot, but not smoking, add half the flour. Stir constantly with wire whisk. Stir rapidly until brown and smooth. Add vegetables and cook until tender. Add tomato sauce, two cups of water, and chicken broth. Simmer for 30 minutes. Add remaining ingredients and simmer for an additional 2-3 hours. Serve over hot rice. Makes 8-10 servings.



*Prepared powdered roux mix (Louisiana Seafood Products) and/or prepared roux (Kary’s or similar) may be substituted.



Shrimp and crabmeat may be substituted with any other type meat (duck; sausage; chicken, etc.) or in any combination. Chicken can be cooked separately in a stock pot with water, celery, onions, salt and pepper. Pick the meat off the chicken when done and use the broth for the gumbo substituting for the 13 oz. can of chicken broth listed above.
