I planted some sweet onions and they look to be doing great. The green stalks coming up are strong and healthy looking.
I have read it takes about 110 days to maturity but these look ready.
How can I tell? Will the top of the onion start to show itself coming up from the ground?

If you just want "green" onions, the little ones without much bulb, you can use them as soon as you want.
If you are after a nice sized bulb, it does take a while. For me in East Texas, I plant 1015 in Oct. and harvest them usually the following May.
Onions will "bolt" to seed heads as soon as the weather turns hot. So far, I only have one or two plants that have bolted as you can see in the picture below. Also note the size of the bulbs in the ground for reference. They are about baseball size and will be ready to pull soon.

On some of mine, it looks like I am starting to get a flower on the top, but the onion is not coming out of the ground yet.
I planted them in early March.

If you want size pull the dirt away from the bulb and spinkle chicken poop around it. Big onions take time, and a lot of water. Plant in the fall pull them when the weather gets to hot and stalks start to wilt.
