superace1, Ithink I got this off of here. This is my modified version.
Put some olive oil on a cookie sheet ( the kind with sides ) not too much
Lay down some filets
Put a layer of cornbread stuffing on filet ( put fresh peeled shrimp of crab in stuffing)
Put another layer of filet on top of the stuffing. Kind of pat it down.
Drizzle some more olive oil and butter on top. ( add minced garlic if you like, I like garlic )
Lightly sprinkle some Italian spices on top ( basil, oragano, dried peppers, dried onions, red peppers etc. I have used an Italian seasoning blend)
Bake at 350 for 45 min+/- until meat is flaky.

This is so good our family broke from tradition and had this for Christmas dinner.

enjoy

Sorry this is stuffed, but not too complicated.

Easy to grill, just like any other fish really. Place in foil, make sure it is scored, add some lemon juice, and cut up the rest of the lemon, add favorite flavor, and grill till flaky.. Also can do in oven..
