I only saved the breasts from the Tom i shot last week and was thinking about smoking it.
Does anyone have any suggestions? Marinades?Injections?

The best recipie I've found for it is to chicken fry it in flour. Cut the breast meat into thin strips. Double dip it in milk/season flour. and fry in hot oil until golden brown. It's the best! I don't like smoking/bbq'ing wild turkey b/c it dries out too easily and gets tough.
Look down a couple of posts and you will see the turkey I grilled over the weekend. Besides stuffing it with the ingredients mentioned in the post, I marinated it in zesty Italian for a couple of hours. Don't over cook or it will get dry and tough as nasakid mentioned. This is the first time I grilled any, usually I just flour and fry. HEB and Kroger carry a seasoned flour called Kentucky Colonel that is good for frying anything.

take the turkey breast and soak it over night in milk and tabasco. then pat dry and cut a pocket into breast. coat the inside with apricot preserves. then stuff with veggies of your choice (carrots, onion, squash, zuccini, and mushrooms are my norms). cut veggies in food processor on fine blade. i usually put somecheese in right before they are done. 1 breast like this usually feeds two people. can be done in oven or pit.
