Got a small pig this weekend, and he is on the pit now. Wanted to get a recipe for bbq sauce, not a mopping sauce while cooking, but a sauce to serve at the table. Let me know what you have - J

I will usually start w/ a store bought and dress/spice it up to my likens...????

Barbeque Sauce
1 ¼ cups ketchup
1/3 cup Worcestershire sauce
1/3 cup lemon juice (2 LEMONS, PUT IN SAUCE)
1/3 cup packed brown sugar
1 tbsp. yellow mustard
¼ cup water
1 clove garlic – crushed
¼ cup butter
drippings from brisket or ribs
combine all of the ingredients except butter and drippings. Simmer over low heat for 1 hour stirring occasionally
Stir in the drippings and cook for 15 minutes longer.

i almost quit making my own sauce after finding this one

3 cups apple cider vinegar
1/4 cup salt
1/4 cup brown sugar
4 tablespoons ground black pepper
2 tablespoons cayenne pepper
1/4 pound butter
1 quart water
In a non-reactive saucepan, combine the cider vinegar, salt, brown sugar, black pepper, cayenne pepper, and butter. Bring to a rolling boil over medium-high heat. Mix in the water, and return to boil.

Heres mine. Seems to work OK.
Saute': In olive oil, 1 whole chopped onion, 2-3 stalks of chopped celery, 6-8 cloves of chopped garlic for 10+ minutes.
Add: Mixture consisting of
3 cups of ketchup,
1 1/2 cups of vinegar,
1 1/2 cups of water,
1/2 cup of (brown?) mustard,
2-3 tbs of Worchestershire,
2 tsp paprika,
4 bay leaves,
2 tbs chili powder,
Cayenne pepper to taste...be careful,
Salt & black pepper to taste.
Simmer at least 30 minutes and add water or cook more according to your tastes in thickness/consistancy. Taste it as you go to make adjustments. Strain and serve.
