?? when a processor smokes your link sausage, should it be cooked all the way through?? the sausage i had made this year is not cooked but on the very outside. it has a very strong smoke flavor that is nice, but not cooked. normally what i am used to is links that are cooked through. i like to cut it up and use in red beans and rice and other dishes but that is hard when its not cooked yet. anybody have any thoughts or comments on this. Thanks.

normally it is not cooked thru , just smoked
you can boil it for 8-10 mins then cut it up for beans and rice esp. if really smokey tasting
or finish it on the grill

It will cook in the beans, the rice or whatever. If it is fully cooked and you add it it will be very dry and not impart much flavor in your dish.
