Just was wondering if anyone here processes/makes thier own venison link sausage and could recommend some spices for a guy starting out. I have been recommended Tex-Joy Sausage Mix and would like comments on that also. I am going to try it this weekend. Any help would be greatly appreciated.

Williams in a square white package. Not too much sage, not too much salt, not too much pepper, its balanced pretty well.

Thanks! They all sound sound good. I will try them all eventually. I am looking for something similar to Midway's Medium sausage in Katy, Tx for any of ya'll that have had it

This is a pretty handy tool. Mix your vinison with the pork 50/50 or how every you wish, add spices, make links or patties, enjoy.

I have had a lot of luck with HiMountain seasonings. The german mix makes great smoked links. I add a little chopped jalapeno and shredded cheese. Call around to a couple of processing places and see if you can buy pork fat (called fat back) to mix with the venison. Good luck and let us know how they turn out.
