we did a barbado years ago in Golthwaite, Tx
worked fine, came out more steamed than bbq'd though
wrapped meat in tinfoil then a wet towsack and buried w coals over and under it and covered w light layerer of soil and rocks as i recall
was more trouble than it's worth, but looked pretty cool

Coastal's right, it will come out more steamed. We use to do pigs and goats years ago when I was alot younger and we had partys at the lake on the weekends. They turned out good and not many leftovers even with a bunch a drunks.

was more trouble than it's worth, but looked pretty coolthat seems to be the old accepted "panhandle" method. we did a pit BBQ back in college(way back) behind our favorite beer joint. the owner had a trench dug and we filled it with mesquite and burned it down to coals,threw a heavy wire screen over it and then the brisket. covered it all with old tin and let it go while we patronized the beer joint. I'm sure we turned and sopped it a few times. I do remember we had a danged good BBQ.
