please give me a recipe for cooking the best tasting catfishing.

dredged in a mustard and hot sauce mixed ,,then put the seasoned [salt ,black pepper and cayenne] corn meal on,, man o man it is sure good,,, it kicks it up a notch ,,lol

Make sure your fillets are good and dry, next season with Tony's, dredge in dry flour, next dip in evaporated milk then finally drege in corn flour, yes corn flour, fry in hot peanut oil...

Also make sure you cut all the red meat off of it. Do that on any fish you cook. It takes the fishy taste out of it. Most people dont do it and it sure makes a big difference. As for cutting the tail an letting it bleed, well that just makes a big mess of everything as you still have to cut the blood meat out. Try it an see the difference. Just my way of doing it an done pleny of it!

I agree, cornmeal salt, pepper and 375 degree oil. Keep thomometer to make sure second batch is at 375 also before starting. mm mmm mmmmmmmmm

Salt, pepper chachere's, and hot grease, and oh yea, some tabasco.
Somebody mentioned "getting the fishy taste" out of it. Well, I kinda like the fishy taste myself.

I use a cornmeal/flour mixture (4 to 1) seasoned to taste with Tony's. The tabasco and mustard idea sounded good. I'm going to try that...

Catfish can be baked or grilled. Spray a cookie sheet or foil with Pam, put a dressing on the fish. Several will work, Ranch, Spicy Itilian, mustard, miracle whip, Spicy Szechuan Stir Fry Sauce is my favorite. If using the Szechuan sauce coat the fish with a small amount of brown sugar. Before putting on the grill or in the oven season with Tony's. Cook unitl the meat flakes.
Baked and grilled catfish is excellent, try it.

in one bowl pour some louisiana hot sauce with a few shots of lemon. in another bowl i use mccormick fish fry with a little extra seasoning of your choice just to add some salt flavor.
dip the fish in the hot sauce then dip it in the fish fry mix
fry it up
the hot sauce just gives the fish a little ****
safe to feed to the kids because it is not hot by any means
