A buddy of mine gave me this recipe for crawfish, it's easy to prepare and excellent!
2 lbs. crawfish tails...HEB has them
2 onions
2 bell peppers
3 cups cooked rice
2 sticks butter
1 can cheddar cheese soup
1 can cream of mushroom soup
Sautee onions and bell pepper in butter until onions are soft and opaque.
Add crawfish and season to taste...I use Tony Chachere's creole seasoning, pepper, garlic salt and a bit of cayenne.
Mix crawfish with the soups and rice put in a casserole dish and cook for half an hour at 350.
