i cheated to make it quick n easy.

12 corn tortillas
veg oil
1 19 oz can of enchilada sauce
4 cups of shredded mexican cheese
1 8oz package of imitation lobster meat

i make mine kid friendly so you might add some onion or spice.

in a small frying pan pour in veg oil to completely coven bottom. fry each tortilla about 3 second each side and put in layered paper towls to soak up excess oil. then pour enchilada sauce into your baking pan(mine is an 8 by 13 and 1.5 inches deep and it fits 12 perfectly. pour a little sauce into a plate for dipping tortillas. dip tortilla in sauce on both sides. put a couple pieces of lobster filling on the tortilla cover with cheese, roll and place seam down in baking pan. make sure you fill em up or they come out like pancakes. repeat for all tortillas. pour remaining enchilada sauce over enchiladas and then sprinkle remaining cheese over enchiladas. bake at 375 for about 20 minutes.

while baking, cook up some mexican rice and beans and man dinner was great last night.
