This is another recipe that is very easy. uses only one pot. needs no fresh ingredients. Buy a box of Zatarains Caribbean Rice mix...I keep a couple on hand. Thaw any kind of fish (I have used Mahi and AJ) and cut it into cubes. You will need the kind of pan or pot with a cover like you would use to fix any rice dish. Put some olive oil in the bottom of this pan or pot and toss in the fish cubes. I use a little salt and pepper and maybe a little Tony C's. Stir and brown the fish cubes until they look, smell and taste good. Then just add the water, rice mix and bring to a boil, simmer covered 25 mins acc to the directions on the box.
