Well the standard way is to marinate them in alegro marinade. Remove the meat from the breast bone and between the breast mediallions (meat) put cream cheese, onion, and jalepeno. Wrap all that in a piece of bacon and stick a toothpick through it all and cook it over mesquite. Another great way that is not done too much is to take the breast mediallions (meat) removed from the bone and tenderize it ( beat the h--l) out of it. Season it and dip it in fish fry and fry it. Its really good.
