View Full Version : Blue crab stuffing...

1 lb flaked blue crab
2 slices bacon
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped bell pepper
1 clove minced garlic (more if you like)
2 cups crushed cracker crumbs (or bread crumbs)
1 teaspoon dry mustard
1/2 teaspoon salt
2 tablespoons chopped parsley
Dash cayenne pepper (more depending on how hot you like it)
1 beaten egg
1/4 cup milk
1/2 cup melted margarine (or butter)
1 teaspoon worchestershire sauce

Check crab meat for shells and cartilage. Cook bacon until crisp; crumble and set aside/ Saute veggies in bacon grease. In large mixing bowl, combine cracker/bread crumbs and dry ingredients. Add all other ingredients and mix well.

If you cannot find crab meat, then I use about a pounds worth of trout fillets. I wrap them in foil, poke hole in the foil and drop them in crab boil or some seafood seasoning like Old Bay and cook until the fillets are done. Usually about 15 to 20 minutes. Remove and drain. after fish has cooled, then flake with a fork. A real good substitue for the crab meat.

With the stuffing made you can make stuffed jalapenos peppers or crab shells.
If stuffing shells, bake at 350 degrees for 30 minutes. If stuffing peppers, I use the FARO MILD Peppers. I drain them on a paper towel. I stuff the half peppers with the stuffing, making them look like a whole pepper. Roll them in flour and dip in your favorite batter and drop them in hot cooking oil and deep fry until golden brown.

Mix some sour cream,horse radish, and garlic salt to dip the peppers in...it is simply good eats
