Tried a new recipe for stuffed flounder last night, only I added Trout also. Man was this delicious. Someone told me how they did their stuffed Flounder so from what I could remember and a little improvision here's what I came up with. Cornbread/Crab meat and diced shrimp stuffing. Layed a piece of bacon on a plate and then layed the Trout or Flounder fillet on the bacon. Applied a heavy coat of stuffing then layed two jumbo shrimp on the fillet at one end and rolled the fillet to the end and stuck a couple of tooth picks in it to hold it togeather. Layed them in the pan and baked. Here's a couple of pics, one before cooking and one after. Not the best pics but you'll get the idea. Had a couple of shrimp left so did the same without the fish. Did I say it was delicious! LoL!!
